South African Bobotie – The Spiced Curried Meat Casserole

Bobotie is a traditional South African dish made from minced beef or lamb, flavored with curry, herbs, and dried fruits, then topped with an egg-and-milk custard. The mixture is baked until the custard sets and the top is lightly golden, creating a comforting and fragrant meal. Often served with yellow rice, chutney, or sambals, Bobotie is a staple at family gatherings and festive occasions.
Ingredients (Serves 4–6)
For the Meat Filling:
500 g minced beef or lamb
1 onion, finely chopped
2 cloves garlic, minced
1–2 tablespoons curry powder
½ teaspoon turmeric
1 slice white bread, soaked in milk
2 tablespoons raisins or sultanas
1 tablespoon chutney (optional)
1 teaspoon Worcestershire sauce
Salt and pepper to taste
1 tablespoon vegetable oil
For the Custard Topping:
1 egg
½ cup milk
A pinch of salt
Instructions
Preheat oven to 180°C (350°F). Heat oil in a pan and sauté onions and garlic until soft. Add minced meat, curry powder, turmeric, salt, and pepper, and cook until browned. Squeeze excess milk from the soaked bread and crumble it into the meat mixture. Stir in raisins, chutney, and Worcestershire sauce. Transfer the mixture to a greased baking dish and smooth the top.
Beat the egg with milk and a pinch of salt, then pour evenly over the meat mixture. Bake in the preheated oven for 30–35 minutes, until the custard topping is set and lightly golden. Serve warm with yellow rice or a side salad.
