Preheat the oven to 475°F (245°C), placing a pizza stone or baking tray inside to heat thoroughly, as high heat is essential for achieving a crisp crust. On a lightly floured surface, stretch or roll the pizza dough into a thin, even circle, taking care not to press out all the air from the edges to maintain a light crust. Transfer the dough onto parchment paper or a pizza peel for easy handling.
Spread a thin, even layer of tomato sauce across the surface, leaving a small border around the edges for the crust. Arrange the sliced fresh mozzarella evenly over the sauce, ensuring it is not overcrowded to prevent excess moisture. Lightly drizzle olive oil over the top and add a small pinch of salt if desired. Carefully transfer the pizza onto the preheated stone or tray and bake until the crust is golden brown and the cheese is melted and bubbling with lightly browned spots.
