Ingredients
4 boneless, skinless chicken thighs or breasts
Salt and black pepper
1 teaspoon garlic powder
1 teaspoon dried thyme or Italian seasoning
2 tablespoons olive oil
Honey Balsamic Glaze
⅓ cup balsamic vinegar
¼ cup honey
2 tablespoons soy sauce or coconut aminos
2 cloves garlic, minced
1 teaspoon Dijon mustard
Vegetables
2 cups baby potatoes, halved
1 cup carrots, sliced
1 red onion, cut into wedges
1 cup broccoli florets
Instructions
Preheat the oven to 400°F. In a small bowl, whisk together the balsamic vinegar, honey, soy sauce, garlic, and Dijon mustard. Set aside.
Season the chicken on both sides with salt, pepper, garlic powder, and thyme. Toss the vegetables with olive oil, salt, and pepper and spread them evenly on a large baking sheet.
Nestle the chicken among the vegetables and pour the honey balsamic glaze over everything, making sure the chicken is well coated.
