Ingredients
2 cups cherry tomatoes (halved)
1 cucumber (sliced)
1 red onion (thinly sliced)
1 cup Kalamata olives
100g feta cheese (crumbled)
3 tbsp olive oil
1 tbsp red wine vinegar
1 tsp dried oregano
Salt and pepper
Instructions
In a large bowl, combine cherry tomatoes, cucumber, red onion, and olives. Crumble feta cheese evenly over the top. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make a simple vinaigrette.
Pour the dressing over the salad and toss gently to coat all the ingredients evenly. Let the salad sit for 5–10 minutes at room temperature for the flavors to meld before serving. Serve chilled or at room temperature as a refreshing side dish or appetizer.
