Pad Kra Pao is one of Thailand’s most beloved everyday meals, known for its punchy flavors and aromatic holy basil. Ingredients (Serves 2–3)
500 g ground pork (or chicken)
4–6 cloves garlic, finely chopped
3–5 Thai bird’s eye chilies, finely chopped (adjust to heat preference)
1 tablespoon vegetable oil
1 tablespoon oyster sauce
1 tablespoon fish sauce
1 teaspoon dark soy sauce
1 teaspoon sugar
1 handful fresh holy basil leaves (Thai basil can substitute, but holy basil is traditional)
2–3 cups cooked jasmine rice
2–3 eggs (optional, for topping)
Instructions
Heat vegetable oil in a wok or large skillet over medium-high heat until shimmering. Add the chopped garlic and chilies, stirring quickly until fragrant but not browned. Add the ground pork and cook while breaking it apart with a spatula, allowing it to sear slightly for deeper flavor. Once the meat is fully cooked, stir in the oyster sauce, fish sauce, dark soy sauce, and sugar, mixing well so the meat absorbs the savory sauce.
Turn off the heat and immediately fold in the holy basil leaves, letting the residual heat wilt them while preserving their aroma. In a separate pan, fry the eggs sunny-side up with slightly crispy edges. Serve the stir-fry generously over steamed jasmine rice and top with the fried egg, allowing the yolk to run into the spicy meat mixture.
Tips for Authentic Flavor
Use holy basil (bai kra pao) if available—it gives the dish its signature peppery aroma.
Cook on high heat for a slightly smoky, wok-char flavor.
