Turkish Menemen – A Sunny, Spiced Scrambled Egg Breakfast

Menemen is a traditional Turkish breakfast favorite, often enjoyed with crusty bread. The dish is cooked gently so the eggs remain soft and creamy while absorbing the sweet acidity of tomatoes and the subtle heat of peppers. Ingredients (Serves 2–3)
4 large eggs
2 medium tomatoes, diced
1 green bell pepper or Turkish green pepper, sliced
1 small onion (optional), finely chopped
2 tablespoons olive oil or butter
Salt and black pepper to taste
½ teaspoon paprika or Aleppo pepper (optional)
Fresh parsley, chopped (for garnish)
Crusty bread, for serving
Instructions
Heat olive oil or butter in a medium skillet over medium heat. Add the onion (if using) and bell pepper and sauté until soft. Stir in the diced tomatoes and cook until they release their juices and form a slightly thickened sauce. Season with salt, pepper, and paprika to taste.
Lower the heat and crack the eggs directly into the pan over the tomato mixture. Gently stir, folding the eggs slowly into the vegetables until just set but still creamy. Remove from heat and sprinkle with fresh parsley. Serve immediately with warm crusty bread for dipping.
