This is one of those dinners that
looks
like you ordered it from a cozy Italian restaurant but actually came together in one pan on a weeknight. Creamy Tuscan chicken is rich, savory, and layered with flavor—tender chicken, a garlic Parmesan cream sauce, tangy sun-dried tomatoes, and fresh spinach that melts right into the dish.
It’s comfort food with a grown-up edge. The sauce is silky without being heavy, the tomatoes add just enough brightness, and the chicken stays juicy thanks to a quick pan-sear before simmering. This is the kind of meal that makes people hover around the stove asking, “When is it ready?”

Ingredients
4 boneless, skinless chicken breasts
Salt and freshly cracked black pepper
1 teaspoon Italian seasoning
½ teaspoon paprika
2 tablespoons olive oil
3 tablespoons butter
5 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
¾ cup freshly grated Parmesan cheese
½ cup sun-dried tomatoes, sliced
2 cups fresh baby spinach
½ teaspoon red pepper flakes (optional)
Fresh basil or parsley, chopped (for garnish)
Instructions
Season the chicken breasts on both sides with salt, pepper, Italian seasoning, and paprika. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear for about 5 to 6 minutes per side until golden brown and cooked through. Remove from the pan and set aside.
Reduce the heat to medium and add the butter to the same skillet. Once melted, stir in the garlic and cook for about 30 seconds until fragrant. Pour in the chicken broth and scrape up all the flavorful bits from the bottom of the pan.
Stir in the heavy cream and let the sauce gently simmer for 3 to 4 minutes until slightly thickened. Lower the heat and gradually add the Parmesan cheese, stirring constantly until smooth and creamy.
Add the sun-dried tomatoes and red pepper flakes, then stir in the spinach a handful at a time until just wilted. Return the chicken to the skillet, nestling it into the sauce. Spoon the sauce over the chicken and let everything simmer together for 2 to 3 minutes so the flavors fully combine.
Remove from heat and garnish with fresh herbs before serving.
How to Serve It
This dish is perfect over pasta, mashed potatoes, or creamy polenta. It also works beautifully with roasted vegetables or a simple side of garlic bread to soak up every last bit of sauce. If you’re keeping things lighter, serve it with cauliflower mash or zucchini noodles—the sauce still steals the show.
